Tomato Soup
Tomatoes can be used in many different ways. This soup recipe calls for crushed tomatoes, which can be made easily in a blender.
INGREDIENTS
1 Tbsp Olive oil 3 cloves Garlic, minced 1 tsp. Dried herbs; thyme, oregano, rosemary, basil 6 Tomatoes (fresh) OR 2 28-ounce cans crushed tomatoes 1 cup Water 2 cups Milk Prep time: 15 minutes Total time: 30 minutes Servings: 6, about 1 1/2 cups each |
DIRECTIONS
1. In a blender, blend tomatoes until crushed and soup-like 2.. Heat oil in a large saucepan over medium heat. Add garlic and herbs. Cook, stirring, until fragrant; about 30 seconds. 3. Add tomatoes and water. Bring to a boil. 4. Reduce heat and simmer for 10 minutes. 5. Stir in milk and heat through, about 1 minute. |
