Roasted Eggplant with Lemon
Eggplant can be grilled, roasted, fried, or baked. This simple recipe can be served over pasta, or all on its own. You can add herbs if you would like to spice up this recipe; try adding thyme, basil, and minced garlic.
INGREDIENTS
1 Large Eggplant 3 Tbsp Olive oil 2 Tbsp Lemon juice (fresh is preferable) Salt and Pepper to taste Prep time: 10 minutes Total time: 35 minutes Servings: 4 |
DIRECTIONS
1. Preheat oven to 400ºF 2 Slice the eggplant in half lengthwise, and then cut each half into quarters lengthwise. Cut each of those in half to make two shorter quarters. 3. Place the eggplant onto the baking sheet with the skin side down. Brush each piece with olive oil and season with salt and pepper 4. Roast until softened and golden brown, about 25-30 minutes. 5. Remove from oven and sprinkle with lemon juice. Serve hot. |
