Roasted Carrots with Thyme
You can use fresh or dried thyme for this recipe. If you do not have thyme, use oregano as a substitute.
INGREDIENTS
2 lbs Carrots ( about 10-15 carrots) 1 1/2 Tbsp. Olive oil 1 1/2 tsp. Thyme (fresh is preferable) 1 1/2 Tbsp Butter Salt and Pepper to taste Prep time: 10 minutes Total time: 50 minutes |
DIRECTIONS
1. Preheat oven to 400ºF 2 Cut carrots on deep diagonal into 1/2 inch-thick slices 3. Toss carrots, oil, and thyme in a large bowl. 4. Sprinkle with salt and pepper. 5. Spread carrots in a single layer on a large rimmed baking sheet. 6. Dot with butter. 7. Roast until carrots are tender and brown, stirring occasionally, about 40 minutes. |
