Kale and Chickpea Salad

INGREDIENTS
1 can Chickpeas, rinsed and drained 4 leaves Kale, chopped 2 Tbsp Parsley, chopped 2 Tbsp Olive oil 1 Clove garlic 1 Lemon, juiced Salt and pepper to taste Parmesan cheese to taste Prep time: 5 minutes Total time: 10 minutes Serves 2-4 |
DIRECTIONS
1. Prepare kale and parsley by chopping into small pieces 2 In a bowl, combine chickpeas, kale, parsley, olive oil, garlic, and lemon juice. 3. Add salt, pepper and grated cheese to taste. 4. Toss all ingredients together and mix well. Best served at room temperature or chilled. |
